Refrigerator Pickled Beets

Refrigerator pickled beets are easy to make and delicious. Enjoy them in cold salads, on sandwiches, or just straight from the jar. For the Self Reliant Skill of the Week, I'm making refrigerator pickled beets for the first time. It's a lot like other pickled vegetables, but you have to cook the beets first, or else they're too hard to enjoy.
