For last week’s Self Reliant Skill of the Week, I showed you how to make lamb’s quarters pesto in case you didn’t have any pasta sauce. Well, what if it’s the other way around, and you don’t have any pasta? This is all about how you an make your own homemade pasta, and avoid a trip to the store!

Making your own pasta is pretty easy, you know exactly what’s in it, and it even cooks faster! You can probably even make it in a shorter time than it takes to go to the store to buy pasta. And it only takes 4 ingredients!

Here is the recipe I used for my first time making homemade pasta:

  • 2 1/2 cups flour
  • 4 eggs
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Dump the flour onto a large cutting board. Make a well in the center with a bowl. Crack the eggs into the well of flour. Pour the olive oil on top of the eggs, then sprinkle the salt on top. Mix up the eggs with a fork, slowly incorporating part of the flour as you mix. Once you have combined everything together into a dough, knead for about 10 minutes. When the dough is nice and smooth, wrap it in plastic wrap and let it rest for 30 minutes.

After the dough has rested for 30 minutes, divide it into 2 pieces. With a rolling pin, roll the dough into a oblong shape, and make it as thin as you’d like your pasta to be. You should be able to nearly see through it when you lift it up. Fold the dough in half, then in half again. With a sharp knife or pizza cutter, cut the shape you want your pasta to be. Unroll the pasta, and it’s ready to be put in boiling water. Or, you can refrigerate it for a day or two before cooking.

This pasta cooks MUCH faster than the pasta you buy at the store. Instead of 7-8 minutes, you’ll probably only need to boil for 3-4 minutes. Top with sauce of your choosing.
