I went to my fridge to make a sandwich – only to find we were out of mayonnaise! So I decided to make homemade mayonnaise for the first time. For my Self Reliant Skill of the Week, I’m showing you how I made this easy homemade mayonnaise from scratch.

I threw together a recipe based on several other homemade mayonnaise recipe posts, and what I had in my pantry. Luckily I was able to pull something together with just what I had on hand!

This isn’t necessarily cheaper than buying mayonnaise at the store, but you know exactly what’s in it and can substitute for other ingredients if you’d like. And cheaper isn’t really why we’re learning to make these things – it’s to learn the new skill!

Ingredients for easy homemade mayonnaise

  • 2 large eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon kosher salt
  • 1/2 teaspoon distilled white vinegar
  • 1/2 teaspoon ground mustard
  • 2 cups extra light olive oil

Directions for easy homemade mayonnaise

Put the eggs, lemon juice, salt, vinegar, and mustard in a wide mouth mason jar. Mix with an immersion blender until all these ingredients are emulsified and creamy. Slowly pour in the olive oil in a steady stream while blending with the immersion blender. Make sure you move the blender up and down so it gets everything combined and mixed well. But don’t mix it too much!
